Fickle Spring

Ah Spring, how much we love you! Days are longer, Skies are bluer. Flowers growing, Colors truer. Warmer days, Walks at night. Now oh, Nature, You've got it right! ... Then comes wind, Then comes snow. Where, oh Spring, Did you go? Snow on ground Sky is gray. It is yet a cold dark day. ... Now I turn ... and behold! Snow is melted, No longer cold! Grass is green. Sky is blue. It's now warm The cold is through? Stay here Spring Please don't go! Don't you know ... We love you so!

OLD Friends

Old friends... Eighth Grade graduation... Really not sooo long ago, was it? Lots of things have happened over the last 44 (44???) years. But when I see you, or talk to you on the phone,or email you ... OR you call me on my birthday every year and laugh to remind me that I'm OLDER than you ... it seems like May 26, 1965 as we graduated from grade school ... was last year! You have blessed me with your friendship!

Miss You Mom

For the first time in 58 years you won't be here with your ready smile, listening ear, words of support, hearty laugh that fortunately - or unfortunately - Did and I inherited. and... singing the harmony part for "Happy Birthday". Breakfast For Dinner

Tonight I came home and asked myself that age old question … What should I fix for dinner?

We haven't had breakfast for dinner in a while, so I thought I'd fix some fluffy waffles, crispy bacon and slice up some bananas.

This is a handy-dandy waffle iron that is really 2 waffle irons in one. There's a waffle iron on the top and when you flip it over, another one on the bottom.
As the bacon was frying...Oh yeah, pretend you don't see the grease, OK? Let's pretend that it is ... a ... tofu bacon, OK?
The recipe that I used tonight was from the original Joy of Cooking cookbook. Instead of regular flour, the recipe calls for cake flour. Oh yeah...that blue box that says Land O Lakes there next to the cake flour is really a box of ... a ... tofu ... comprende? This dinner/breakfast is strictly fat-free, for goodness sakes!
Start by beating the egg whites until stiff, but not dry...
Set aside the egg yolks.
Then take baking powder,
Salt,
And sugar, and mix into the cake flour. Add the butter, egg yolks and milk to the dry ingredients. Blend lightly.
Fold in the egg whites.
Bake according the directions for your waffle machine.
Important!!!! You MUST keep things nice and neat (not like me!) otherwise the waffles will not taste as good!!! Please! This is very important!! Good morning, good evening and have a good night! Joy of Cooking Waffle Recipe
1 3/4 cup cake flour 2 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon sugar 3 eggs separated 7 Tablespoons of the Land O Lakes stuff in the blue box, melted 1 1/2 cups milk. Mix the dry ingredients together. Mix the egg yolks, melted butter and milk together. Add to the dry ingredients and stir with a few swift strokes. it should resemble pebbles. Beat the egg whites until stiff, but not dry. Fold them into the batter until barely blended. Bake according to the manufacture's instruction.

Oreos

Some things are timeless... like Oreo cookies.

Beautiful E-Girl's daddy was holding her so very trustingly in his crisp white shirt as she enjoyed her chocolaty soft, delicious Oreo. Gran had to put a nice dish towel around Daddy's neck to avoid a 3-day laundry nightmare. I think it worked. Didn't it?

Pinks and Greens

Browns and grays. Lately that seems all that there is outside.... Today we decided to grill outside since it turned out to be so pretty after such a scary (in more ways than one) morning. While I was waiting for the grill to heat up, I took a turn or two around the garden. I was just out there Friday looking for some little, small, tiny, minute sign that something was beginning to awaken, but was disappointed! Ha! But today, look what I spotted! Some PINKS AND GREENS!!!! Things have changed a bit!
Here are some buds from our magnolia tree. We've lived in our house 30 years and this tree was here when we moved in. It still is a gorgeous tree!
Here is a hyacinth that is trying to make its way out from its cold winter respite. Yippee and welcome back color!! I missed you!

Little Man

Our newest grandson is 2 months old. He had a bit of a struggle for the first week and a half of his life, but now he is flourishing, gaining 6 pounds just since he was born!
Doesn't he look like he knows all the secrets of life?

Definitely ... he knows!

Let the Sun Shine...

Yes... Do you see it? There is a shadow there!! Yes...right there...see it? If there is a shadow, that must means that the sun shone for a brief time today! Even though it feels like 30 degrees below zero out there with a wind chill of minus 250 .... THE SUN SHONE! There is hope!

Making Vanilla

Do you know that you can make your own vanilla? All it takes is a bunch of vanilla beans and vodka! (I was going to write about making kolaches today...but whoops... it helps to read the recipe correctly.... they did not turn out as expected, so I wrote about vanilla! Whooohoooo!!)
