Tonight I came home and asked myself that age old question … What should I fix for dinner?
We haven't had breakfast for dinner in a while, so I thought I'd fix some fluffy waffles, crispy bacon and slice up some bananas.
This is a handy-dandy waffle iron that is really 2 waffle irons in one. There's a waffle iron on the top and when you flip it over, another one on the bottom.
As the bacon was frying...Oh yeah, pretend you don't see the grease, OK?
Let's pretend that it is ... a ... tofu bacon, OK?
The recipe that I used tonight was from the original Joy of Cooking cookbook.
Instead of regular flour, the recipe calls for cake flour.
Oh yeah...that blue box that says Land O Lakes there next to the cake flour is really a box of ...

This dinner/breakfast is strictly fat-free, for goodness sakes!
Start by beating the egg whites until stiff, but not dry...
Set aside the egg yolks.
Then take baking powder,
Salt,
And sugar, and mix into the cake flour.
Add the butter, egg yolks and milk to the dry ingredients. Blend lightly.
Fold in the egg whites.
Bake according the directions for your waffle machine.
Important!!!! You MUST keep things nice and neat (not like me!) otherwise the waffles will not taste as good!!! Please!

Joy of Cooking Waffle Recipe
1 3/4 cup cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
3 eggs separated
7 Tablespoons of the Land O Lakes stuff in the blue box, melted
1 1/2 cups milk.
Mix the dry ingredients together.
Mix the egg yolks, melted butter and milk together.
Add to the dry ingredients and stir with a few swift strokes. it should resemble pebbles.
Beat the egg whites until stiff, but not dry.
Fold them into the batter until barely blended.
Bake according to the manufacture's instruction.
