The rub goes on a pork tenderloin that has been sliced into 1 inch medallions.
Saute the medallions on all sides 'til nice and brown in extra virgin olive oil.
You'll notice that I use an electric skillet ... Even though I have a new stove.
It's a long time habit I got from my mom. Since we don't have a gas stove, for some recipes ... this pan helps keep the cooking at a more controlled temperature ...
Add the chopped cabbage. Add about 1 tablespoon of butter, salt and pepper to taste, but be careful not to over salt, the beef rub is pretty salty.
Please ignore the toothbrush in the background. We've been without a bathroom sink for awhile!
Lower the heat and cover with a lid and cook until the pork is tender and the cabbage gets golden and sweet.
Yum!!
FYI -- I usually slice and season the pork tenderloin when I first bring it home from the grocery store. I then place the medallions on a cookie sheet and freeze, later placing the frozen pork into a plastic bag. Later, on a busy night, I can just pop out the amount of pork I need into the pan, saute it, add a bag of shredded cabbage and within 45 minutes I have a nice meal for my DH!

You are sooo clever, preparing that before you put it into the freezer.
I think I can smell this. Nothing smells better than pork cooking (well that and onions). Just fabulously delicious. Another recipe I can try next week when I have house guests. My role seems to be chief cook and bottle washer for the hard workers leading up to the wedding.

Pork and cabbage! That combination can't be beat and this looks delicious! I like the way the cabbage is caramelized. I'm always looking for ways to use tenderloin besides grilling, so I'm putting this on the roster! Or in the roaster! haha

Don't you love cabbage that has been sauteed so that it tastes so sweet! I think that is the Polish coming out of me! I love galumki that has been sauteed a bit to bring out that wonderful cabbage flavor!
